malted vanilla cake




1.     preheat oven to 350degreesF. butter two 8-inch round cake pans. line bottoms w/parchment paper; butter paper. flour pans; set aside.
2.     combine milk et vanilla. in a bowl stir together cake flour, sugar, baking power, et salt. add milk mixture et butter; beat on low speed w/an electric mixer until combined. increase to medium; beat 1min.
3.      add 2 egg whites; beat on medium speed 30secs. scrape down sides of bowl. add remaining egg whites; beat 30seconds.
4.      divide batter between pans. bake 30mins or until toothpick inserted near center comes out clean. cool in pans on rack 10mins. remove from pans; remove parchment. cool on rack.
5.     place one cake layer, top-side up, on a serving plate. spread w/some frosting. top w/remaining layer. frost top et sides. decorate w/candy. makes 16 servings.

malted vanilla frosting in a very large bowl beat 2 cups softened butter on medium speed w/an electric mixer until creamy. reduce speed to low; gradually beat in 6 cups powdered sugar et 1 cup vanilla-flavored malted milk power. increase speed to medium. add 4 tbsp evaporated milk, 1 tbsp vanilla, et 1/2 tsp salt. beat 2mins or until smooth. add additional powdered sugar et milk to make spreadable.
